Restaurant style mix veg curry| Mixed Vegetarian gravy

Let’s talk about everyone as well as mom's favorite mix veg. Mix veg is the one of the famous and delicious north Indian Punjabi style recipe. If suddenly someone come at home, then you can try this restaurant style mix veg.

RESTAURANT 

STYLE MIX VEG CURRY| MIXED VEGETARIAN GRAVY

INGREDIANTS



For Grind
1 medium sized onion, roughly chopped
2 medium to large tomatoes, roughly chopped
1 cup water

For Gravy masala
1 tablespoon oil
1 teaspoon cumin seeds
1 teaspoon ginger
½ teaspoon turmeric powder
1 teaspoon kashmiri chilli powder
2 teaspoon coriander powder
1 teaspoon chaat masala powder
½ teaspoon garam masala powder
1 green chili, finely chopped

For mix veg preparation
2 tablespoons oil
1/2 cup potatoes, chopped
1/2 cup cauliflower, chopped
1/4 cup french beans, chopped
1/4 cup carrot, chopped
1/4 cup capsicum, chopped 
1/2 cup green peas , fresh or frozen
1.5 cups water or add as required
salt as per taste
2 tablespoons cream
5 to 7 paneer cubes, OPTIONAL


2 tablespoons chopped coriander leaves
                  
INSTRUCTIONS:

For Grind
  1. Heat up a pan, add tomato and onion and 1 cup of water in it and mix well.
  2. Boil till the tomato and onion become too soft and mushy at medium flame.
  3. Switch off the flame and cool down the mixture.
  4. Grind the mixture into a smooth paste.
For Gravy masala
  1. In a pan, heat 1 tablespoon oil.
  2. Add cumin seeds and let them splutter.
  3. Add finely chopped ginger and saute till the raw aroma of  ginger goes away.
  4. Add red chilli powder, turmeric powder, jeera powder, garam masala, chaat masala. Mix it well.
  5. Add 2 tablespoon finely chopped coriander leaves.
  6. Now, add grounded paste and mix well.
  7. Mix spice powders very well with the onion-tomato paste.
For mix veg preparation
  1. Add all the chopped mixed vegetables other than coriander and paneer. Stir well. Cover the lid and keep the heat at a minimum.
  2. Cook for 20 minutes while stirring occasionally.
  3. Now, add gravy in the veggies and stir well.
  4. Once the veggies are half cooked, add the cream or malai or milk. stir well.
  5. Cover again with a lid and simmer the veggies till they are done.
  6. Don’t forget to check the vegetables occasionally at intervals.
  7. Add more water if the water dries up and if the veggies are still to be cooked.
  8. Once the veggies are cooked and the mix veg curry is done, then switch off the flame.
  9. Garnish with chopped fresh coriander leaves and serve mix vegetable sabzi with fresh paratha or roti.
