Sweet Punjabi Lassi is serves as a refreshing drink in the summer season to refresh your mind as well as to drink healthy and popular in Punjab and North India. Today, I will share my favorite sweet Punjabi Lassi recipe that is super delicious and an authentic as well as a healthy drink recipe in the summer season. Trust me, Punjabi Lassi and paratha combination during summer season is a favorite in most Indian households. It helps to lower the body heat and as we all know, adding yogurt in our meal reduce the effect of the spiciness of any recipe to give calm effect to the stomach and improve digestion after every meal.
How to make thick Lassi?
The Punjabi's used to serve this Punjabi Lassi in a huge glass and add 2-3 tablespoon of white butter or cream on top of the lassi glass. Their huge glass is very thick and drink after the meal of the day.
Here, I use a wooden hand blender(madani) to make a sweet as well as creamy Punjabi Lassi. We can also make lassi with an electric blender or mixer, but I prefer to make this lassi by churning homemade curd with the help of madani as traditional way. Most people prefer Homemade Curd to make a lassi as it tastes best to have fresh curd and not sour one. This way makes the lassi more sweeter. We can also add flavors as we can garnish with cardamom powder, few saffron trends or top with chopped or sliced dry fruits to the Lassi. You can add dry fruits of your own choice. It's depends on you.
What are main ingredients used for Punjabi Lassi?
Yogurt: Fresh yogurt is the main key ingredients of any variation of Lassi. Use of full fat curd to get a thick and creamy texture or prefer Homemade curd to avoid the sourness of yogurt from outside.
Sweetener: Traditionally, sugar is used in Punjabi Lassi. The addition of sweetener balances the sour flavors.
Chilled Milk: Here, I use 1/2 cup Chilled milk. Addition of chilled milk gives creamy flavor and also reduce the sourness from the yogurt. You can skip it and also use chilled water instead of chilled milk.
Cardamom Powder: Addition of cardamom powder or saffron trends makes the Lassi more delicious.

How to make lassi without blender?
We can also make lassi without blender. As I prefer to make the Punjabi lassi by churning homemade curd with the help of madani as traditional way. Most people prefer Homemade Curd to make a thick lassi as it tastes best to have fresh curd and not sour one. This way makes the lassi more sweeter.
Sweet Lassi verses Mango Lassi?
As we all know, Punjabi's love to drink thick lassi. Apart from Sweet Lassi and Salted Lassi, another one is Mango Lassi. Mangoes are a favorite of many people and make this lassi which has sweet mangoes blended with yogurt. Here, I used some quantity of cold milk. You can also skip cold milk and use ice cubes or cold water instead of cold milk. For preparation of mango lassi recipe, I have used mangoes, yogurt, milk, sugar and cardamom. Mostly people like to serve this Punjabi Lassi with parathas or chaat. They also serve, spoon with this huge Lassi glass so that they first eat soft cream and buttery white butter and then drink the Lassi.
There are many other variations of lassi such as in the sweeter version as Mango Lassi, Strawberry Lassi, Rose Lassi, Plain Lassi etc.. I know some people who like another lassi variation which is totally different from sweet lassi as it is known as Salted Lassi or chaas or buttermilk. You can have this salted lassi after every meal of the day.

- Always prefer Homemade curd to avoid the sourness of yogurt from outside.
