Aloo ka Halwa|Navratra Special

Aloo Halwa is an Indian dessert recipe made using potatoes as base ingredients which melts in our mouth and gives delicious taste. Mash boiled potatoes is cooked with sugar cardamom powder, milk and ghee. Green cardamom seeds can be freshly ground using a pestle and mortar to add aromatic flavour to desserts. We can also called as potato pudding in english. During festivals or vrat, potato is not only cooked for sabji, its also use to prepare the dessert as aloo ka halwa. Aloo ka halwa is prepared in many of the houses during vrat and festivals. Not only in festivals, aloo ka halwa is also prepared in day to day life. Aloo Halwa is easy to make and prepared in very less time.

As you all know, for fast we can make variety of dishes such as potato fry, vrat wali aloo ki sabji, sabutdana khichdi, aloo tikki and  apart from desserts LAUKI KA HALWAGAJAR KA HALWA, makhane ki gheer, etc. and also some snacks such as Farali potato fingers and potato balls etc.


Can we use butter instead of ghee?

Yes, we can make aloo ka halwa in butter also. But the taste of ghee gives aromatic flavour than butter.


How to store aloo halwa?

The leftover aloo halwa is stored in air tight container for 2-3 days. The aromatic flavour  of aloo halwa remain same.


Suggestions

  1. For garnishing, you can take dry fruits of your own choice.

  2. The procedure of making shakarkand ka halwa is similar to aloo ka halwa but with less quantity of powdered sugar used. As you all know, shakarkand vegetable is a sweet potato.

  3. As my daughter likes dry fruits too much that’s why I am using more dry fruits. you can increase or decrease the quantity of dry fruits.

INGREDIANTS


4 medium size boiled potatoes
1/3 cup powdered sugar
1 tsp green cardamom powder
1/2 cup milk
1 tbsp cashew nuts, finely chopped or crushed in motor pestle
1 tbsp almonds, finely chopped or crushed in motor pestle

Garnishing
1 tsp cashew nuts, chopped
1 tsp pistachio, chopped 

INSTRUCTIONS:
  1. Boil the potatoes and peel them and keep it aside.
  2. With the help of masher, mash all the potatoes or grate potatoes with the help of grator.
  3. In a deep sauce pan, Heat 3-4 tbsp ghee.
  4. Now, add mashed potatoes and roast on medium flame until mashed potatoes change their colour to slightly brown.
  5. The process of sauting mashed potatoes in ghee takes 10 minutes.
  6. On the other hand, take a jar, grind 1/3 cup sugar, cardamom seeds and milk and keep it aside.
  7. Now, add sugar cardamom powder to the mashed potatoes.
  8. Mix everything thoroughly and cook for 8 minutes.
  9. Saute aloo ka halwa until ghee separates from the sides of the pan.
  10. Now, finely chopped the dry fruits or crushed dry fruits with the help of motor pestle.
  11. Now, add chopped almonds, cashew nuts and mix well.
  12. Garnish with cashew pistachio and serve hot aloo ka halwa in a bowl.

Tips
  1. You can add dry fruits of your own choice.
  2. You can increase or decrease the quantity of dry fruits used in recipe. 
  3. You can adjust the sweetness of the dessert. 
  4. You can store leftover aloo halwa in air tight container for 2-3 days.
