Making Lauki halwa or dudhi halwa is very easy to prepare
where grated bottlegourd is cooked till tender and then milk, mawa and dry
fruits are added to it. You can make it for any party or whenever you crave for
eating some sweet then try making this halwa.

INGREDIANTS
4 tablespoons ghee (clarified butter)
500 gm grated (bottle gourd or dudhi)
2 cups full fat milk, or 500 ml - milk should be boiled
before and can be used at room temperature or chilled
1 bowl sugar or add as required
5 to 6 green cardamoms - powdered or crushed in motor
pestle or ½ to 1 teaspoon cardamom powder
½ bowl chopped nuts - almonds, cashews or pistachios

1. Heat a deep sauce pan, add 2-3 tablespoon ghee on medium-low flame. Use a large kadai so that milk does not splutter outside.
2. Now add in grated lauki and saute for 8 minutes. Saute lauki till the moisture dries.
3. Saute till the lauki shrinks slightly and changes colour.
4. Then add full-fat milk. mix very well.
5. Continue to cook on a low to medium-low flame till the milk comes to a boil. In between do stir at times.The milk will start boiling. At this step be stage and keep on stirring, so that the milk does not spill from the pan.
6. While the mixture is simmering on a low flame, keep on stirring in between.
7. Cook for 10 minutes or till milk thickens and lauki gets cooked completely.Stirring often continue to cook till ¾ or 75% of the milk has reduced and absorbed.
8. Keep on stirring the halwa in between on low flame.On the other side, chop cashews and almonds in small chunks. Peel the cardamom and ground the seeds to make powder.
9. When the milk has 80% reduced, add sugar to the mixture.
10. After adding sugar,the halwa will start leaving water, so cook it while stirring. We'll cook it too.
11. Now the halwa until sugar dissolves completely and the moisture evaporates completely.
12. The lauki halwa will gradually thicken and you will see some ghee being released from the sides. There should not be any liquid in the dudhi halwa.
13. Now, add nuts and ¼ tsp cardamom powder. mix well.

14. Then switch off the flame and Garnish with some chopped nuts and serve lauki halwa hot or chilled.
Tips for making dudhi

- Before making the halwa do taste the bottle gourd once as at time it comes bitter in taste and this can spoil your halwa.
- You can add more ghee if you want.
- Avoid using skimmed milk or toned milk as they may curdle. Use only full-fat milk or whole milk. Sugar can be added less or more as per taste.
- A few saffron strands can also be added.
- You can add your choice of dry fruits and nuts.
