The khatti meethi imli chutney is also known as sauth chutney. Imli chutney is popular in north India. The imli chutney is slightly thick with a smooth texture. It has the sourness of tamarind balanced with the sweetness of the jaggery and the earthiness and mild hotness coming from the dry ginger powder, cumin and red chili powder. Imli chutney is stored in an air-tight dry jar or container and refrigerate it for 5 months and serve ghate- meeti chutney with chaat or snacks.

INGREDIANTS



250 gm seedless tamarind, tightly packed (imli)
400 gm jaggery or as required - adjust as per your taste
2 cups water
1 teaspoon oil
½ teaspoon cumin seeds
½ teaspoon saunth powder (ginger powder)
1 teaspoon fennel powder
½  teaspoon red chili powder
½  teaspoon garam masala powder
½ black salt   

INSTRUCTIONS:

Making Tamarind pulp
  1. Soak tamarind in water overnight or for 8 to 10 hours in a small bowl or pan.
  2. Boil the soaked tamarind and sieve soaked tamarind with a sieve as soon as it becomes soft. Tamarind pulp is ready.
  3. With your hands, squeeze the pulp from the tamarind in the same bowl or pan.
  4. Strain the pulp and keep aside.

Making imli chutney
  1. Heat oil in a pan.
  2. Now, add cumin seeds at low flame and let it crackle.
  3. Now, add tamarind pulp and cook for 2-3 mins.
  4. Mix sugar or jaggery and 1 cup water in tamarind pulp.
  5. Cook for 4-5 minutes on medium flame. Stir continuously so that there should be no lumps in the form of jaggery.
  6. When the sauce comes to a boil, add fennel powder, ginger powder, red chilli powder, black salt and garam masala powder and mix well. 
  7. Mix all the ingredients and let the mixture thicken.
  8. To check the chutney, put one drop of it in the bowl and stick it between the finger and thumb and try to see a wire forming in it. As soon as the wires are formed, switch off the flame.
  9. Add raisins and poppy seeds to the chutney and mix.
  10. Let the imli chutney mixture cool.
  11. Fill the imli tamarind chutney an air-tight dry jar or container and refrigerate and serve whenever required with chaat or snacks.

Tips
  • You can use tamarind pulp instead of tamarind.
  • You can have the consistency of the chutney as per your choice. Simply alter the amount of water and make the imli chutney slightly thin or thick as per your requirements.
