Let’s talk about Punjabi gatte ki sabji. Punjabi gatte ki sabji is very delicious recipe and very tasty to eat. Gatte are basically cooked gram flour dumplings which are added to the spicy curd gravy. It is easy to make at home. Rajasthani Besan ke Gatte vegetable is Rajasthani food. It is very popular in rajasthani cuisine. Punjabi  gatte ki sabji  serves with roti, parathas or jowar roti or bajra roti, phulka or naan. You can also serve this besan ki sabji with steamed rice or jeera rice.

INGREDIANTS


For making and cooking gatte
1 cup besan / gram flour
½ tsp coriander seeds, crushed
½ tsp cumin seeds, crushed
¼ tsp ajwain / carom seeds, crushed
¼ tsp turmeric powder
½ tsp red chilli powder
¼ tsp salt
2 tbsp ghee / clarified butter
2 tbsp curd / yogurt
2 tbsp water
4 cups water for cooking gatte

For curd masala
1 cup curd, beaten
1 tsp red chilli powder
1 tsp coriander powder
1 tbsp kasuri methi

For gatte gravy
Oil for frying gatte
2 tbsp oil
1 tsp cumin seeds
1 medium size onion, finely chopped
1 tsp ginger garlic paste
1 tsp Kashmiri red chilli powder
½  tsp garam masala
1 cup of the cooked gatte water or add as required
salt as required
2 tablespoons chopped coriander leaves

INSTRUCTIONS:


Making dough for gatte
  1. In a large bowl , take 200 gm besan and add red chilli powder, turmeric powder and grounded powder (crust coriander seeds, cumin seeds and carom seeds with the help of motor pestle), salt, oil and curd.
  2. Mix everything very well.
  3. Then add water in parts and begin to knead.
  4. Knead very well allowing the besan to absorb water.Knead to a semi -soft dough like poori dough. It takes almost 10 minutes.

Cooking gatte
  1. In a deep sauce pan, heat up  4 cups water on medium  flame.
  2. Divide the besan dough in 6 equal parts. Roll each part to a smooth ball.
  3. With the help of your finger, roll each ball as in the cylindrical shape.
  4. Do the same with all the dough balls. Don’t  make too much large unless it will break during boiling gatte or you can divided into two parts.
  5. Put the gas on high flame and let the water comes to boil.
  6. Now, carefully  place each gatte in hot boiling water.
  7. After they are cooked, the gatte pieces should float on top and bubbles will be seen on them. This means that they are cooked.
  8. Remove gatte with a slotted spoon draining the extra water.
  9. Place them on plate and let them become warm or cool at room temperature.
  10. Cut the cooked gatte in small round thick discs.


Frying gatte
  1. Heat up oil on low flame.
  2. Once, oil is done, add cooked gatte and shallow fry for 2-3 minutes.

Gatte Gravy
  1. In a deep sauce pan, heat oil and add cumin seeds and let it splutter.
  2. Now, add finely chopped onion and ginger garlic paste.
  3. Saute it until golden brown.
  4. On the other hand, make a smooth paste of tomato, green chilli and ginger and keep it aside.
  5. Now, whisk  ½ cup curd and add red chilli powder, garam masala powder, roasted kasuri methi and mix well.
  6. Once its golden brown, then add tomato paste and salt and mix well.
  7. Saute it continuously till it separates oil from the sides.
  8. Now, add curd masala and mix well.
  9. Now, switch the gas on low flame and keep on stirring continuously while the curd gets cooked.Stir continuously until there should be no lumbs . 
  10. Now , add Kashmiri red chilli powder  and mix well. 
  11. Saute until oil separates from the sides. This will takes 5-7 minutes.
  12. Now, add remaining water in which the gatte were cooked.
  13. Stir continuously until the mixture comes to a boil. Stir at different intervals.Let this gravy to a boil.
  14. Once the gravy comes to a boil, add all fried gatte (gram flour dumplings). 
  15. Simmer on low to medium-low flame till curry thickens .
  16. Cover and boil for 5 minutes.
  17. Now,add garam masala and coriander leaves and mix well.
  18. Finally, serve gatte ki sabji with roti, parathas or bajra roti, phulka . You can also serve this besan ki sabji with steamed rice or jeera rice.

4. Do the same with all the dough balls. Don’t  make too much large unless it will break during boiling gatte or you can divided into two parts.










5. Put the gas on high flame and let the water comes to boil.




6. Now, carefully  place each gatte in hot boiling water.

7. After they are cooked, the gatte pieces should float on top and bubbles will be seen on them. This means that they are cooked.

8. Remove gatte with a slotted spoon draining the extra water. Place them on plate and let them become warm or cool at room temperature.

8.  Cut the cooked gatte in small round thick discs.

Frying gatte

1. Heat up oil on low flame.
 2. Once, oil is done, add cooked gatte and shallow fry for 2-3 minutes and keep it aside.




Gatte Gravy

1. In a deep sauce pan, heat 2 tablespoon oil and add cumin seeds and let it splutter.










2. Now, add finely chopped onion and ginger garlic paste.
3. Saute it until golden brown.
4. On the other hand, make a smooth paste of tomato, green chilli and ginger and keep it aside.











5. Now, whisk  ½ cup curd and add red chilli powder, garam masala powder, roasted kasuri methi and mix well.












6. Once its golden brown, then add tomato paste and salt and mix well.

7. Saute it continuously till it separates oil from the sides.

8. Now, add curd masala and mix well.

9. Now, switch the gas on low flame and keep on stirring continuously while the curd gets cooked. Stir continuously until there should be no lumbs. 

10. Now , add Kashmiri red chilli powder  and mix well.

 11. Saute until oil separates from the sides. This will takes 5-7 minutes.
 12. Now, add remaining water in which the gatte were cooked.
 13. Stir continuously until the mixture comes to a boil. Stir at different intervals. Let this gravy to a boil.


14. Once the gravy comes to a boil, add all fried gatte (gram flour dumplings). 

15. Simmer on low to medium-low flame till curry thickens .

16. Cover and boil for 5 minutes.
17. Now,add garam masala and coriander leaves and mix well.
